Does luxury mean to decorate with grandeur and gorgeous color? Enowa believed that we must redefine luxury in our stressful modern society. The answer we arrived at is the Botanical Retreat. And we have defined the luxury of the future as the places and times where we can free our minds and bodies and regain our true selves. Therefore, we go beyond the beautiful landscape and delicious food to provide you with an experience which awakens your five senses and evokes joy from deep within your body. We practice the concept of Farm-Driven, a reimagining of Farm to Table. We place the farm at the center of all our cuisine by producing our ideal farm, cultivating the ultimate ingredients, harvesting them on the morning of the day we use them, and share with you a flavor of hitherto unexperienced joy. It is this philosophy that inspired chef Tashi Gyamtso to come to Japan. Formerly the co-executive chef at Blue Hill at Stone Barns, the restaurant in New York which spread the concept of Farm to Table to the world, he has come to Enowa to further evolve his career. Another individual who was inspired by our concept is Teruhisa Ishiwari, known as the master farmer of Ishiwari Farm. Seeing the potential to grow new foods in the lands of Yufuin, he began working closely as a team with Tashi cultivate the farm and people several years before opening. Botanical Retreat Enowa is a hidden place surrounding by the light, the wind, the waters, the trees, and the plants. Saying goodbye to the base luxury of consumption, Enowa is a luxury Auberge where people become one with nature and where countless connections are cultivated. It is a place hitherto missing from Japan where you do not simply stay, you experienced a renewed you.

This is the philosophy that lives through the cuisine of Enowa. Farm-Driven is a concept that updates the farm to table approach which has captivated gourmets throughout the world. Rather than depending on luxury food ingredients obtained from market, we begin with creating the soil of the farm to grow our ingredients and harness that overflowing power to complete each delicious dish.

Here is the origin of the delicious flavors of Enowa.
Many years before the opening of Enowa, we invited Teruhisa Ishiwari of Ishiwari Farm to Yufuin, where he began tilling the soil and cultivating vegetables and herbs. Therefore, it is this abundant farm which is the origin of the delicious flavors of Enowa. Every morning, our chef visits the farm, because the answer to all matters of taste, ideas, and the menu can be found in the fields.

At the legendary Blue Hill at Stone Barns restaurant in New York, Chef Dan Barber, who introduced the concept of Farm to Table, has been selected as one of the 100 most influential people in the world. Tashi Gyamtso served beside him as co-executive chef and right-hand man. In Tibet, Tashi’s homeland, there is a culture of showing gratitude to culinary ingredients, and considering foods from the ingredients that go into them. One could say that that DNA blossomed at Blue Hill at Stone Barns. And now, traveling from New York to Yufuin, Tashi’s cuisine is evolving yet again. Since being invited to serve as the chef at Jimgu, Tashi has been traveling throughout Japan to visit food growers in his relentless pursuit of the ideal ingredients. And the food he creates as a result breathes with the life of the soil and land. Here in Japan, a treasure trove of ingredients, Tashi’s philosophy has led to the most beautiful cuisine.
